It states that, while the second half might seem a little like Sci-Fi, and that none of the scenarios will likely ever come to pass, we believe we would live to see pieces of each of the scenarios actually become reality.

A recent study says Americans are getting fatter thanks to an increase in their consumption of refined, processed carbohydrates. Whole grains and carbohydrates with a low glycemic index are far better for you than refined carbohydrates like white flour and refined white sugar.

The Food Guide Pyramid puts grains, breads and other carbohydrates as the eat most category of foods. That leads most people to falsely believe that eating a dozen doughnuts is keeping them in full compliance with the food guide pyramid, since doughnuts are technically breads and grains.

Good carbs provide sustained energy and can definitely be part of a healthy, balanced diet: fresh fruits, fresh vegetables, whole grains, brown rice, and so on.

Bad carbs include all refined carbohydrates: basically, anything that's been milled and stripped of its original, natural elements such as fiber, healthy oils, vitamins and minerals. All white flour is nutritionally deadly. Really. White flour kills you. Eating to Live Weight Loss
       

Are you eating to live, or living to eat??
 
       

We are conditioned to eat three meals a day and snack in between. Even our weight loss diets prescribe three squares plus a few extra corners.

I know living to eat. If you are thinking about what to make for a next meal, or what to snack on, and you're not hungry, you are living to eat. Feeling like having something to eat is not hunger; I think sometimes we believe our sensation of desire for food is hunger.

I'm not advocating severe low caloric content dieting, starvation levels under 900 calories a day, or any other torture. In fact, I advocate eating all day. If you eat a handful of cereal, or a handful of blueberries or tomatoes when you're hungry - and then go do something, anything but look at an empty plate or the fridge, you will be satisfied; you can eat like that all day in a grazing fashion, never be hungry, and not overeat.

The trick is to feed your body what it needs, not what your mind wants. Your body will tell you. You know when it's 103 degrees and you've been carrying boxes, your body tells you it wants water. If you learn to listen to your body, it will actually hunger for specific nutrients. I almost never eat bananas. But once in a blue moon I want one; it's my body saying pass the potassium.

I didn't say this would be easy, at least not at first. Getting off the idea of three squares plus is a hurdle. But I found that once I chose to graze, I could later include a regular meal still be eating to live. I did find that Edward and I can split any meal anywhere and both still leave some over. We eat all day, but we don't eat until stuffed.

The harder part of eating to live was in facing the things I didn't have to look at if I was preoccupied with hunting/gathering (at Safeway or Publix) and eating.

While shopping for vacation clothes, my husband and I passed a display of bathing suits. It had been at least ten years and twenty pounds since I had even considered buying a bathing suit, so I sought my husband’s advice.

“What do you think?” I asked. “Should I get a bikini or an all-in-one?”

“Better get a bikini,” he replied. “You’d never get it all in one.”

Mood Swings & Obesity
 
 
 

Mood swings are typically due to sudden changes in blood-sugar levels, affecting the transport of the neurotransmitter seratonin to the brain. One thing you can do to help yourself is to avoid sweet foods and refined white-flour products, which cause sudden rises in blood sugar.

Negative thinking has a very profound detrimental effect on the body. Any type of stress can lead to exhaustion whether or not you have a strong or a weak constitution. Stress will eventually catch up to the most robust constitution.

 

The social stigma attached to being overweight in our society can certainly contribute to depression, but there is more to it than that. Fat tissue can act as an endocrine gland, causing significant changes to hormone and blood sugar balance, which can have a major impact on mood. Depression can change dietary intakes; carbohydrates (especially simple carbohydrates like candy and sugary snacks) help to increase brain seratonin levels, making people feel better, but at the cost of weight control and yeast control.

Regular exercise can make a world of difference for the depressed. Even a single 30-minute burst of exercise has been shown to improve mood and feelings of well-being in depressed individuals. Exercise helps balance blood sugar levels and relieve stress; it may even raise our seratonin levels.

Self denial is normally seen as not having something you want: denying yourself. To some extent most diets rely on a certain amount of this.

But for the obese, the self denial is really self deception; we deny our self to ourselves.

We don't acknowledge our level of fatness. A recent study found that 9 out of 10 people think that most other Americans are fat, but only 4 out of every 10 think they themselves are overweight.

We don't tell ourselves the truth about how much and how often we eat.

We may have developed coping strategies to maintain this deception which create problems at work or home. We deny these, too.

The biggest self denial, self deception is that we can't lose weight. I tried for 40 years - oh, I lost a lot of weight a lot of times. But I was convinced I could never get it off and keep it off.

Over 6 years ago I lost 180 pounds and I have kept it off.

The average American consumes an astounding 2-3 pounds of sugar each week, which is not surprising considering that highly refined sugars in the forms of sucrose (table sugar), dextrose (corn sugar), and high-fructose corn syrup are being processed into so many foods such as bread, breakfast cereal, mayonnaise, peanut butter, ketchup, spaghetti sauce, and prepackages meals and snacks.

The glycemic index is a measure of how a given food affects blood-glucose levels, with each food being assigned a numbered rating. The lower the rating, the slower the absorption and digestion process, which provides a more gradual, healthier infusion of sugars into the bloodstream. A high rating means that blood-glucose levels are increased quickly, which stimulates the pancreas to secrete insulin to drop blood-sugar levels. These rapid fluctuations of blood-sugar levels are not healthy because of the stress they place on the body.

Generally speaking, high levels of insulin inhibit the breakdown of fatty deposits in the body. How Long Does Food Sit In Your System?  
The time it takes for food to travel through the digestive tract, known as bowel transit time, is dependent on diet and varies greatly from person to person. For example, people who eat a high-fiber diet (large quantities of fruits, vegetables, and whole grains) tend to have rapid transit times and bulky stools.

During digestion, your food is chewed and swallowed, then acid and digestive enzymes are added as it moves through your stomach. Upon leaving your stomach, the food is squeezed through your 15-21 foot long small intestine. As it moves through, nutrients and water are absorbed for use by your body. It continues to move by rippling waves of muscular contractions through your large intestine. Whatever hasn't been digested and absorbed by your intestines combines with water, bacteria, and various excreted substances to become stool. Stool is expelled from your body through your anus. The time this entire process takes (your bowel transit time) is one measure of your bowel function.

There an easy way to measure your bowel transit time in the privacy of your home: food markers. There are many foods that, either through color, texture, or both, show up at the end of the journey in a recognizable fashion: beets, blueberries, cherry tomatoes, and corn are a few that I have found to be very reliable. (I suggest blueberries or cherry tomatoes, as beets and corn are both high glycemic foods that support yeast growth.)

A home bowel transit test can help you to become more aware of your bowel function level and to see how different foods in your diet can effect the rate at which food moves through your digestive tract; the faster the food moves through the digestive tract, the less time your system has for yeast to grow and establish colonies in your system.

If you plan to use food markers to measure bowel transit time at home, do not eat these foods for a few days before starting the test.

To test your fastest transit time, do not eat anything after 6 PM at night. After 8 AM the next morning, eat a small container (about a cup and a half to two cups) of your chosen marker food. Do not eat anything else until after noon. When your marker food exits, merely subtract the time you ate the marker food from the time it exits.

To test your slowest transit time, eat normally through the day, and eat a large dinner including foods from several food groups: meat, grain, green vegetables and starch (potatoes, rice, etc.) Add dessert if you like, to maximize the starting status. Eat nothing after 6 PM. The next morning, eat your food marker morning meal, and again wait until after noon to return to normal eating. The time difference between the food marker consumption and the marker exit is your longest transit time.

Salmonella from cantaloupe, sprouts and fruit juices: Hepatitis A from strawberries: Cryptosporidium from scallions: Shigella from parsley: E. coli O157:H7 from lettuce, spouts and orange juice: Cyclospora from raspberries: Listeria from sprouts: Aeromonas hydrophilia, Listeria, Salmonella, Shigella, Staphylococcus spp. (multiple varieties), and others all from prepared salad mix: the list of disease-causing microbes (bacteria and Fungi) in fruits and vegetables is almost as varied as our supply of fresh produce.

According to a report by the Centers for Disease Control and Prevention (CDC), fresh produce was the most significant source of foodborne illness in 2005. In 2000, the CDC reported that the occurrence of foodborne disease increases during the summer months for all foods, including fresh produce. They report the number of reported produce related outbreaks annually doubled between 1973-87 and 1988-92.

The article sites three major reasons for the increased incidence: increased foreign imports and the handling methods and ready-to-eat packaging of those produce products, modified atmosphere packaging, to keep produce looking fresh longer which "…may open a window of opportunity for pathogens to grow," and "…poor hygiene practices and inadequate inspections at produce-processing plants, according to a report issued in March by the House of Representatives Subcommittee on Oversight and Investigations of the Committee on Energy and Commerce."

According to ASM's (American Society of Microbiology) Microbe magazine (June, 2008), "Foodborne outbreaks attributable to leafy greens such as lettuce, cabbage, and spinach increased substantially during the past 35 years, and continue to cause public health problems throughout the United States."

E. coli and Coliform bacteria are fecal bacteria. High populations of urbanized wild animals and hillside dog walking areas contribute to the E. coli and Coliform population on your lawn. In the movie the War of the Worlds, the microbes took down the alien invaders when the military could not.
As E. coli and Coliform levels go up in our food and in our environment people are getting ill; people die from this in America today. E. coli infection usually causes diarrhea, which can be bloody, and appears within two to eight days after infection. People who have symptoms should contact their doctors.
Government regulation is needed and welcomed in the battle against E. coli; however the rate of E. coli and Coliform infestations are moving much faster than the wheels of government, as per the CDC’s report of incidence doubling as presented above.
Today much of the country is being flooded; flooding spreads E. coli and Coliform bacteria. Multiple Water Watch Groups in 25 states (1/2 of the United States) report E. coli counts in excess of 90% above safe levels in the water. Well water should be tested periodically; however, after flooding testing should be mandatory.
Foreign human and pet foods move into the United States in massive volumes both fresh and processed. The budget constraints are such that rigorous testing and monitoring cannot be accomplished. Possibly the model of the Water Watch Groups should find fertile ground as Food Watch Groups.
As my readers and obesity counseling clients change their eating habits in an effort to get their Candida yeast infestations, their overweight or obesity, and their other Candida infection symptoms under control, I see many of them moving towards a healthy consumption of more fruits and vegetables. My experience with molds, yeasts, and bacteria personally, in the field and in my laboratory prompts me to bring to attention information about these healthful foods which frequently harbor Bacteria or Fungus.

All fruits, vegetables, nuts and grains are habitat to Bacteria or Fungi: one or the other will dominate the territory of the various foods we eat. The main difference between Bacteria and Fungus is the time factor to resulting death after exposure and contraction. Bacteria is fast; untreated it can lead to death, in days, weeks, months. Fungus is insidious and slow compared to bacteria and a wide range of its symptoms is normally not attributed to it, thereby allowing it to grow unchecked for years. Fungus is a contributing factor to morbidity, often named as a secondary cause of death (COD); however, Fungal infections take a long time to kill you.

My personal experience with the Fungus Candida had a dramatic effect on my life and the conditions caused by Candida; my morbid obesity was cured by a dietary change to reduce the yeast infestation in my body, and a variety of other Candida yeast symptoms such as chronic fatigue, moodiness, fogginess, and just feeling older than I should cleared up as well.

Unfortunately, E. coli, Salmonella and General bacteria, which multiply at a much faster rate than Fungus, are a greater and more immediate health threat. My laboratory (Florida Institute of Mold/Florida Institute of Yeast Optimum Recovery Laboratories) has been working with Micrology Laboratories’ E. coli media, an EPA approved media for Water Watch Groups. Our recent culturing of fresh pre-washed packaged salad mix* yielded high amounts of General bacteria, Coliforms, and E. coli. The food we eat is going to have Bacteria or Fungi, and it is important to know what health threat each type of food has, and how to reduce that threat.

What you can do:

All scrubbable fruits and vegetables should be thoroughly scrubbed; the scrub brush should be washed well with dish soap or run through the dishwasher often. Wash all berries, all lettuce (whole head lettuce is safer than pre-washed packaged lettuce), and all non-scrubbable fruits and vegetables with fast-running water.

Before you cut or peel, scrub the skins of cantaloupes and other melons with water and a clean vegetable brush to prevent transfer of pathogens from the rind to the flesh.

Eat only sprouts only if cooked (even if they are home-grown). In restaurants, request no sprouts on your sandwich or salad. (Personally, I am no longer going to eat the salad at restaurants.)

Utilize commercially available vegetable wash or mix a drop of chlorine in a gallon of water to use as a rinse for all produce.

Anyone with organ and hematological malignancies, and HIV patients should test home and office environments for the following Yeast species: Candida albicans, Candida spp., C. glabrata, C. tropicalis, C. parapsilosis, and C. krusei.
